Cajun Shrimp Soup

I LOVE this soup. It's spicy and warm and filling and not too bad for you either.

Ingredients

1 tablespoon
Butter, Unsalted
1⁄2 cup
Green Bell Pepper (Chopped)
1⁄4 cup
Green Onion (Sliced)
3 cups
Vegetable Juice
8 ounces
Clam Juice
1⁄2 cup
Water
1⁄4 teaspoon
Thyme
1⁄4 teaspoon
Basil
1⁄4 teaspoon
Red Pepper Flakes
1  
Bay Leaf
1⁄2 teaspoon
Salt
1⁄2 cup
Long-Grain Rice (Uncooked)
3⁄4 pounds
Shrimp (Peeled and deveined)

Instructions

Melt the butter in a large pot over medium heat. Saute the green bell pepper, onions and garlic until tender. Stir in vegetable juice, clam juice and water. Season with thyme, basil, re pepper, bay leaf and salt. Bring to a boil and stir in the rice. Reduce the heat and cover. Let simmer for 15 minutes, untill rice is tender.

Stir in shrimp and cook for 5 more minutes or until shrimp are opaque. Remove the bay leaf and season with hot sauce.
