I made these in my 9 inch cast iron skillet. It produced 6 blintzes. You could probably get more if you used a smaller pan.

Basic Crepe Batter

Description

This is a basic crepe batter recipe. It can bee used for cheese blintzes or just regular crepes.

If you have the time let the crepe batter set in the fridge for 1 hour. Supposedly this makes the crepes less rubbery. I personaly call bullshit, but hey if you have the time go for it. I have shit to do and places to be, so I went for it right after mixing and they were perfect.

Ingredients

1 cup
Milk
1⁄4 cup
Water (cold)
1 cup
All-Purpose Flour
1 pinch
Salt
1 tablespoon
Sugar
3 tablespoons
Unsalted Butter (melted)
1 teaspoon
Vanilla

Instructions

  1. Combine the milk, water, eggs, flour, salt and sugar and blend.
  2. Pour 1/3 cup batter into a 9 inch heeted and oiled frying pan.
  3. Tilt and swirl pan to make batter coat the whole bottom of the pan.
  4. Cook for 30-60 seconds.
  5. Flip and cook for another 30-60 seconds.

Cream Cheese Filling

Description

So easy and yet so tastey. This recipe can be used for more than just blintz filling, it also makes an awsome fruit dip.

Ingredients

8 ounces
Cream Cheese (1 package)
3 tablespoons
Powdered Sugar
1  
Lemon (zested)
1 teaspoon
Vanilla

Notes

I put this in a ziplock bag when using it a filling. It makes for easier distrabution.

Instructions

  1. In your food processor add the cream cheese, powdered sugar, lemon yest and egg.
  2. Blend until smooth.

  1. Pipe a good amount of filling ontop the edge of the crepe.
  2. Roll like a burrito.
  3. Top with fruit of your choice.
